WHEN TO EXPECT YOUR BEEF
Our beef is processed only once a year from early to mid summer. After your beef goes to market, you can expect it to be ready in approximately 2 weeks. Place your order early as we only have limited annual supply.
HOW MUCH BEEF TO EXPECT
If you ordered a half you can expect to receive about:
2 Rump Roasts, 3 Tip Roasts, 12 Chuck Roasts, 12-14 Ribeye, 10-12 New York Strips, 5 Sirloins, 6-8 Tenderloins, 160-180 lbs. of lean burger, 1 Brisket, 1 Flank Steak, 1 Skirt Steak
FREEZER SPACE
When calculating for freezer space, allow for 6 cubic feet for a half beef. Chest freezers generally use space better than upright freezers.

Cost Breakdown
STEER COST
Meat is sold by hanging weight. This is approximately 60% of live weight. We estimate that our steers will weigh 1,400 lbs., which would be 840 lbs. hanging weight. We charge $3.50/pound of hanging weight.
PROCESSING COST
Baraboo Meat Market's average processing fee is $0.80/pound (depending on the cuts of meat you choose), plus a $120 processing fee. Download The Meat Market's processing fee guide.
TOTAL COST
With these prices in mind, the total estimate you could expect to pay, to Gavin Farms and The Baraboo Meat Market is: $925: quarter, $1,850: half, $3,700: whole.
